Today’s recipes come from the cookbook “Whole Heap of Goodness” (ISBN: 9780985172602) by Chad Thilborger. The self-published cookbook is a compilation of his family’s recipes. It is available for $24.95 at www.awholeheap.com.

Carrot Jell-O Salad
(From his Aunt Annie)
1 pack of lemon Jell-O
1 cup boiling water
1 can crushed pineapple
1/4 teaspoon salt
1 cup grated carrots
1 small container of Cool Whip
1/2 cup chopped pecans (optional)

Open pineapple and drain juice into a measuring cup and then add water until you have 1 cup liquid.
Adding boiling water to lemon Jell-O; add syrup/water mixture and salt. Put into refrigerator until it starts to jell then add remaining ingredients. Stir all together and place back in the refrigerator.
This is best if done the day or night before serving. Garnish with grated carrots and chopped pecans.

Maw Maw’s Pralines
(His Maw Maw was his mother’s mother.)
1 cup sugar
1 cup brown sugar
3/4 cup evaporated milk
1/4 pound butter
1 tablespoon vanilla
pecan halves

Combine sugars and evaporated milk in a pot and dissolve completely on medium heat. Bring to a boil and stir frequently for about 2-3 minutes.
Remove from heat and add butter and vanilla. Now stir in pecans. Mix briskly for about 2 minutes and then spoon mixture out onto wax paper.
Hint — I often put newspaper underneath my wax paper to prevent any grease or seeping liquid from getting onto my countertop.

Russian Spice Tea
(A Christmas favorite of the author.)
18 ounce container of Tang
3/4 cups of instant tea
1 package of lemonade mix … I usually use Kool-Aid
1 cup of sugar
2 teaspoons cinnamon
1/2 teaspoon ground cloves

Mix and store. When you are ready, boil water and add to your favorite mug and add 2 teaspoons of dry mix and enjoy. If you crave sugar, add a teaspoon.
