Tuesday’s Taste Tempters 9.27.11

Today’s recipe has been submitted by members of the Obion County Family and Community Education Clubs.
German Chocolate Upside-down Cake
1 cup flaked coconut
1 cup chopped pecans
1 18.25-ounce box chocolate cake mix
2 large eggs
1 1/4 cup water
1/4 cup vegetable oil
1 8-ounce package cream cheese
1/2 cup butter or margarine
1 16-ounce package powdered sugar, sifted
Grease a 13-inch by 9-inch by 2-inch pan. Line with waxed paper; grease paper. Sprinkle coconut and pecans in the bottom of the prepared pan and set aside.
Combine cake mix, eggs, water and vegetable oil. Mix according to package directions. Spoon batter over coconut and pecans.
Combine cream cheese and butter in sauce pan. Cook over low heat, stirring often, until butter melts and is smooth. Stir in powdered sugar. Spoon mixture evenly over batter.
Bake at 350 degrees for 40 to 50 minutes. Cool in pan on wire rack for 10 minutes. Invert cake onto a serving plate. Remove wax paper.
