Oven-Fried Parmesan Chicken
4 boneless skinless chicken breasts, cut into strips
1 cup nonfat plain yogurt
3/4 cup bread crumbs
4 tablespoons grated parmesan cheese
2 tablespoons flour
1 teaspoon paprika
pinch of cayenne pepper
nonfat vegetable spray
Preheat the oven to 425 degrees and spray cookie sheet.
Place chicken strips in yogurt and refrigerate while preparing the rest of the ingredients
In a medium bowl mix the rest of the ingredients.
Coat each piece of chicken well with yogurt and dredge in the crumb mixture, pressing down on both sides to get a thick coat of crumbs.
Place chicken strips on the cookie sheet, spray lightly with vegetable spray.
Bake for 15-20 minutes or until chicken is fork tender and the juices run clear.
