3 cups skim milk
6 tablespoons quick-cooking tapioca
1/2 cup egg substitute or 2 large eggs
2 tablespoons sugar or sugar substitute
1/4 teaspoon salt
1 cup orange juice
1 teaspoon vanilla extract
1/2 cup diced mandarin orange sections
Combine the milk, tapioca, egg, sugar, and salt in a medium non-stick saucepan Cook over medium heat, stirring constantly, until the mixture comes to a boil. Remove from the heat. Stir in orange juice, mixing well. Return to heat, stirring until the mixture comes to a boil. Let the mixture cool 10-20 minutes, stirring occasionally. Stir in vanilla and diced mandarin oranges. Chill well before serving.
Nutrition Information: Serving size = 1/2 cup (8 servings): Amount per serving: Calories 117, Total fat 1g, Cholesterol 55mg, Sodium 98g, Carbohydrates 21g, Protein 5g and Fiber 1g.
Notes: Using the egg substitute reduces the amount of cholesterol. Milk provides calcium.
